Quick and Easy Vegetarian Energy Bites

Hello friends! I've been so busy with work and life and everything in between, but that's not stopping me from getting myself and my family a little healthier. I'm slowly (very slowly) transitioning into the vegan lifestyle. I was vegetarian for 4 years of my life while in college and after. I started eating white meat again when I got pregnant because I didn't do the whole vegetarian thing right. I didn't get enough protein so I was always dragging and tired and didn't feel quite right. This time I'm doing it right and I've been coming up with easy recipes that I think are going to help...

These energy bites are so good. They're like eating candy and they're just enough sweet to get me through. I'm not a huge fan of sweets but when I do want a little something, I only want a little bit so these are the perfect size.

Here's how to make them:

In a bowl mix

1 cup oats
1/2 cup chocolate chips
(vegan if you have them to make this recipe vegan)
1/4 cup flax seeds
1/2 cup natural peanut butter
1/3 cup agave nectar
2 tbsp chia seeds

Roll them in your hands to form 1 inch balls. Lay them on a cookie sheet with parchment paper and put in the freezer for 1-2 hours then transfer to the refrigerator. I keep them in a little bowl in the fridge so my family can easily grab them. My husband and son love these and my husband actually asked last night when I'm going to make them again.

Gonna go make a batch of these now for us to snack on this week. Hope everyone has a wonderful Sunday!!! And as always thank you for stopping by to see what I'm up to over here!!

Follow me everywhere!!!
